Today's Olympic culinary adventure was to make Nigerian Coconut Candy
I never knew how difficult it is to crack open, skin, and grate coconut. Chip used a screwdriver, a hammer, and a chisel to get the meaty part ready for me to grate. FYI coconut oil is a bit slippery. Two cuts and a grated knuckle later, we had our coconut ready to turn into candy.


I will admit I expected the caramelized sugar to turn a golden color like the original recipe showed. It did not. Maybe I did something wrong, but I boiled and stirred that stuff for a good 20 minutes straight (with my hand in a hot pad!).

This tastes like very sweet coconut. Shocking, right? Delicious in moderation unless you don’t like coconut like Ebabe.
